Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C).
  2. Season the chicken: Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper on both sides.
  3. Sear the chicken: Heat a little olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 3-4 minutes on each side, until they are golden brown. The chicken doesn’t need to be fully cooked, as it will finish cooking in the oven.
  4. Assemble the dish: Place the seared chicken breasts in a greased baking dish. Layer the bell pepper slices over the chicken breasts, alternating red and yellow peppers.
  5. Add cheese: Sprinkle the mozzarella and cheddar cheese evenly over the top of the chicken and peppers.
  6. Bake: Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C) and the cheese is bubbly and golden.
  7. Garnish and serve: Remove from the oven and garnish with fresh chopped parsley. Serve hot with your favorite side dishes like rice, mashed potatoes, or a green salad.
