Baked Mac and Cheese

Topping:

  • 1 cup panko breadcrumbs (or regular breadcrumbs)
  • 2 tbsp melted butter
  • 1/4 tsp paprika (optional, for color and flavor)

Instructions:

  1. Cook the Pasta:
  • Preheat oven to 350°F (175°C). Cook the pasta according to package instructions, but undercook it by about 2 minutes to keep it firm. Drain and set aside.
  1. Make the Cheese Sauce:
  • In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook, stirring constantly, for 1-2 minutes until it becomes slightly golden (this removes the raw flour taste).
  • Slowly pour in the milk and heavy cream, whisking to prevent lumps. Continue to cook, stirring often, until the mixture thickens, about 5 minutes.
  • Add 2 cups of cheddar cheese and the mozzarella cheese to the sauce, stirring until melted and smooth. Season with salt, pepper, garlic powder, and onion powder, if using.
  1. Combine Pasta and Sauce:
  • Add the cooked pasta to the cheese sauce, stirring to coat evenly. Pour half of the mac and cheese into a 9×13 inch baking dish.
  • Sprinkle half of the remaining cheddar cheese on top, then pour the rest of the mac and cheese on top. Sprinkle the remaining cheddar cheese and Parmesan on top.
  1. Prepare the Topping:
  • In a small bowl, mix the panko breadcrumbs with melted butter and paprika. Sprinkle evenly over the top of the mac and cheese.
  1. Bake:
  • Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  1. Serve:
  • Let it sit for a few minutes before serving to set slightly.
