Cheesy Beef Pie

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Beef: In a skillet, heat the olive oil over medium heat. Add the diced onion, red bell pepper, and green bell pepper, sautéing for about 3-4 minutes until they soften. Add the ground beef, garlic powder, paprika, salt, and pepper. Cook until the beef is browned and fully cooked, about 8-10 minutes. Drain excess grease.
  3. Prepare the Cheese Mixture: In a bowl, mix together the sour cream, cottage cheese (if using), and half of the shredded cheddar.
  4. Assemble the Pie: Place the pie crust in a pie dish. Spread half of the cheese mixture on the bottom of the crust. Layer the cooked beef mixture on top, then spread the remaining cheese mixture over the beef.
  5. Top with Cheese: Sprinkle the remaining cheddar and mozzarella cheese on top, then add fresh thyme (if desired).
