Cheesy Chicken Skillet with Peppers and Tomatoes

Instructions:

  1. Cook the chicken:
  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the diced chicken breasts, season with salt, pepper, cumin, and paprika. Cook for about 6-8 minutes, or until the chicken is golden and cooked through. Remove the chicken from the skillet and set aside.
  1. Cook the vegetables:
  • In the same skillet, add the chopped onion, green bell pepper, red bell pepper, and garlic. Sauté for about 4-5 minutes, until the vegetables are softened.

  • Return the cooked chicken to the skillet and mix with the vegetables and tomatoes.

  • Once the cheese is melted, remove the skillet from heat and garnish with freshly chopped cilantro.
