Cheesy Chicken Skillet

Instructions:

  1. Cook the Chicken:
  • Heat olive oil in a large skillet over medium heat.
  • Add cubed chicken and cook until golden brown and fully cooked through (about 6-8 minutes).
  • Remove the chicken from the skillet and set aside.
  1. Cook the Vegetables:
  • In the same skillet, add the chopped onion and bell pepper. Sauté until softened, about 3-5 minutes.
  1. Combine Ingredients:
  • Add the diced tomatoes, garlic powder, paprika, salt, and pepper to the skillet.
  • Return the cooked chicken to the skillet and stir everything together.
  1. Add Cheese:
  • Sprinkle the shredded cheese over the top of the chicken mixture.
  • Cover the skillet with a lid and let the cheese melt (about 2-3 minutes).
  1. Serve:
  • Garnish with fresh parsley or cilantro, and serve warm.
