Cheesy Meatloaf with Mashed Potatoes

Ingredients for Mashed Potatoes:

  • 2 lbs (900 g) potatoes (Yukon Gold or Russet), peeled and chopped
  • 1/2 cup butter
  • 1/2 cup milk (add more for creamier consistency)
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven:
  • Preheat your oven to 375°F (190°C).
  1. Prepare the meatloaf:
  • In a large bowl, combine the breadcrumbs and milk. Let it sit for 2-3 minutes to absorb.
  • Add the ground beef, egg, chopped onion, minced garlic, Worcestershire sauce, ketchup, salt, pepper, and parsley to the bowl. Mix everything well but don’t overwork the meat.
