Cheesy Meatloaf with Mashed Potatoes

For the Mashed Potatoes:

  • 2 lbs (900g) potatoes, peeled and chopped
  • 4 tbsp butter
  • 1/4 cup heavy cream or milk
  • Salt and pepper, to taste
  • 1/2 cup shredded cheese (optional for extra creaminess)

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  2. Prepare the meatloaf: In a large bowl, combine ground beef, chopped onion, garlic, egg, breadcrumbs, milk, Worcestershire sauce, thyme, salt, and pepper. Mix everything until just combined.
  3. Shape the mixture into a loaf and place it in the prepared pan. If desired, brush the top with ketchup or BBQ sauce for extra flavor.
  4. Bake the meatloaf: Bake for about 45 minutes to 1 hour, or until the meatloaf is cooked through (internal temperature of 160°F / 70°C). During the last 10 minutes, sprinkle shredded cheddar cheese on top and let it melt.
  5. Meanwhile, prepare the mashed potatoes: Boil the potatoes in salted water for 15-20 minutes or until tender. Drain and mash them with butter, cream or milk, and season with salt and pepper. Stir in some shredded cheese if you want an extra creamy texture.
  6. Serve: Slice the meatloaf and serve it alongside a generous helping of mashed potatoes. For an extra indulgence, drizzle some melted cheese over the mashed potatoes.
