Cheesy Potato and Ground Beef Casserole

Instructions:

  1. Cook the Potatoes:
  • Boil the potato cubes in salted water until tender (about 12-15 minutes). Drain and set aside.
  1. Cook the Beef:
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant.
  • Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat.
  • Stir in the beef broth and season with salt and pepper. Let the mixture simmer for 5-10 minutes.
  1. Prepare the Casserole:
  • Preheat the oven to 375°F (190°C).
  • In a large baking dish, spread half of the cooked potatoes at the bottom.
  • Pour the ground beef mixture over the potatoes.
  • In a bowl, mix the sour cream and milk together. Spread this over the beef layer.
  • Add the remaining potatoes on top and sprinkle generously with shredded cheese.
  1. Bake:
  • Bake for 20-25 minutes or until the cheese is melted, golden, and bubbly.
  1. Serve:
  • Garnish with fresh parsley, if desired, and serve hot.
