Cheesy Potato and Smoked Sausage Casserole

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the sausage: In a skillet, melt the butter over medium heat. Add the sliced smoked sausage and cook for 4-5 minutes until browned. Set aside.
  3. Prepare the sauce: In the same skillet, add the chopped onion and garlic. Sauté until soft and fragrant, about 2-3 minutes. Stir in the heavy cream (or milk), sour cream, and season with salt, pepper, paprika, and thyme. Simmer for 3-4 minutes until the sauce thickens slightly.
  4. Layer the casserole: In a greased 9×13-inch baking dish, arrange a layer of potato slices, then add a layer of cooked smoked sausage. Pour some of the cream sauce over the potatoes and sausage, then sprinkle with a layer of cheddar cheese. Repeat the layers until all ingredients are used, finishing with a generous amount of cheese on top.
  5. Bake: Cover the casserole with foil and bake for 40-45 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly, and the potatoes are tender when pierced with a fork.
  6. Garnish and serve: Once baked, allow the casserole to cool slightly before serving. Garnish with fresh parsley for a pop of color and added flavor.
