Chicken Enchiladas with Sour Cream White Sauce

Instructions:

  1. Preheat Oven:
  • Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  1. Assemble the Enchiladas:
  • In a large bowl, mix the shredded chicken with ½ cup cheddar cheese and ½ cup Monterey Jack cheese.
  • Warm the tortillas slightly to make them easier to roll. Place about 2-3 tablespoons of the chicken and cheese mixture in the center of each tortilla, then roll them up tightly.
  • Place the rolled tortillas seam-side down in the prepared baking dish.
  1. Make the Sour Cream White Sauce:
  • In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, stirring constantly to form a roux.
  • Gradually whisk in the chicken broth, making sure to avoid lumps. Continue whisking until the mixture thickens, about 5 minutes.
  • Remove the pan from heat and stir in the sour cream, diced green chilies, garlic powder, cumin, salt, and pepper. Mix until smooth and creamy. (Do not boil the sauce after adding the sour cream, or it may curdle.)
  1. Pour the Sauce:
  • Pour the sour cream sauce evenly over the enchiladas in the baking dish, making sure they are fully coated.
  1. Top with Cheese:
  • Sprinkle the remaining shredded cheddar and Monterey Jack cheese on top of the enchiladas.
  1. Bake:
  • Cover the dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  1. Serve:
  • Let the enchiladas cool slightly before serving. Garnish with fresh cilantro, and enjoy with your favorite toppings like guacamole, salsa, or sliced jalapeños!

Tips:

  • Add Veggies: You can mix in some sautéed onions, bell peppers, or spinach with the chicken for added texture and flavor.
  • Spice It Up: If you like it spicier, add chopped jalapeños or a pinch of cayenne pepper to the sauce.
  • Make Ahead: These enchiladas can be prepared ahead of time and refrigerated before baking.
