Chicken Pot Pie Pasta: The Ultimate Comfort Dish


Ingredients

For the Pasta:

  • 12 oz (340g) pasta (penne, rotini, or shells work well)
  • 2 cups shredded or diced cooked chicken (rotisserie chicken is perfect)
  • 1 cup frozen peas and carrots mix
  • 1/2 cup corn (optional)
  • 2 tbsp olive oil or butter

For the Sauce:

  • 4 tbsp unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup heavy cream (or whole milk for a lighter version)
  • 1/2 tsp thyme
  • 1/2 tsp rosemary
  • 1/2 tsp garlic powder
