Ingredients
For the Pasta:
- 12 oz (340g) pasta (penne, rotini, or shells work well)
- 2 cups shredded or diced cooked chicken (rotisserie chicken is perfect)
- 1 cup frozen peas and carrots mix
- 1/2 cup corn (optional)
- 2 tbsp olive oil or butter
For the Sauce:
- 4 tbsp unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 3 cups chicken broth
- 1 cup heavy cream (or whole milk for a lighter version)
- 1/2 tsp thyme
- 1/2 tsp rosemary
- 1/2 tsp garlic powder
- Salt and pepper to taste
For the Topping (Optional):
- 1/2 cup breadcrumbs or crushed Ritz crackers
- 1/4 cup grated Parmesan cheese
- 1 tbsp melted butter
