For the Nachos:
- 1 large bag of tortilla chips
- 2 cups shredded cheddar cheese (or a mix of cheddar and Monterey Jack)
- 1/4 cup sliced jalapeños (fresh or pickled)
- 1/4 cup diced tomatoes
- 1/4 cup chopped green onions
- 1/4 cup sour cream (optional)
- 1/4 cup guacamole (optional)
- Fresh cilantro leaves, for garnish
Instructions
1. Prepare the Chili:
- In a large skillet or saucepan, cook the ground beef (or turkey) over medium heat until browned. Drain any excess fat.
- Add the diced onion and garlic to the skillet, cooking until softened (about 3 minutes).
- Stir in the chili powder, cumin, smoked paprika, and cayenne (if using). Cook for 1 minute to release the spices’ flavors.
- Add the beans, diced tomatoes, and tomato paste. Stir well and bring to a simmer.
- Reduce heat and let the chili simmer for 15–20 minutes, stirring occasionally. Adjust seasoning with salt and pepper.
