Chili Cheese Nachos

For the Nachos:

  • 1 large bag of tortilla chips
  • 2 cups shredded cheddar cheese (or a mix of cheddar and Monterey Jack)
  • 1/4 cup sliced jalapeños (fresh or pickled)
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream (optional)
  • 1/4 cup guacamole (optional)
  • Fresh cilantro leaves, for garnish

Instructions

1. Prepare the Chili:

  1. In a large skillet or saucepan, cook the ground beef (or turkey) over medium heat until browned. Drain any excess fat.
  2. Add the diced onion and garlic to the skillet, cooking until softened (about 3 minutes).
  3. Stir in the chili powder, cumin, smoked paprika, and cayenne (if using). Cook for 1 minute to release the spices’ flavors.
  4. Add the beans, diced tomatoes, and tomato paste. Stir well and bring to a simmer.
  5. Reduce heat and let the chili simmer for 15–20 minutes, stirring occasionally. Adjust seasoning with salt and pepper.
