Corn Casserole

Instructions:

  1. Preheat the oven:
  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish (or an 8×8 dish for a thicker casserole).
  1. Mix the ingredients:
  • In a large bowl, combine the drained whole kernel corn, creamed corn, sour cream, melted butter, corn muffin mix, and eggs. Stir until everything is well mixed.
  1. Add the cheese (optional):
  • If you like, fold in 1 cup of shredded cheddar cheese for extra flavor.
  1. Pour into the baking dish:
  • Pour the corn mixture into the prepared baking dish and spread it evenly.
  1. Bake:
  • Bake for 45-50 minutes or until the casserole is golden brown on top and set in the middle. You can test for doneness by inserting a toothpick into the center; it should come out clean.
  1. Optional garnish:
  • If you like, sprinkle chopped green onions or chives over the top just before serving for a fresh flavor.
  1. Serve:
  • Let the casserole rest for about 5-10 minutes before serving. It pairs beautifully with roasted meats, BBQ, or as a side dish for a holiday meal.

Variations:

  • Add-ins: Try mixing in diced jalapeños, green chiles, or crumbled bacon for a bit of a twist.
  • Sweeter version: Add 1-2 tablespoons of sugar or honey to make the casserole slightly sweet.

This Corn Casserole is creamy, rich, and packed with sweet corn flavor. It’s an easy side dish that everyone will love!
