Instructions
- Heat the olive oil in a large pot over medium heat. Add the ground beef, season with salt and pepper, and cook until browned, breaking up the meat as it cooks.
- Add the onion and garlic, and sauté until softened.
- Stir in the paprika, thyme (if using), and tomato paste, and cook for about 1 minute to blend the flavors.
- Pour in the beef broth, diced tomatoes, and pasta shells. Stir well and bring to a boil.
- Reduce heat and let simmer for 10-12 minutes, or until pasta is tender and most of the liquid is absorbed.
- Stir in the heavy cream and cheddar cheese until smooth and creamy. Adjust salt and pepper to taste.
- Serve warm, garnished with fresh parsley, if desired.
