Creamy Beef and Shells

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the ground beef, season with salt and pepper, and cook until browned, breaking up the meat as it cooks.
  2. Add the onion and garlic, and sauté until softened.
  3. Stir in the paprika, thyme (if using), and tomato paste, and cook for about 1 minute to blend the flavors.
  4. Pour in the beef broth, diced tomatoes, and pasta shells. Stir well and bring to a boil.
  5. Reduce heat and let simmer for 10-12 minutes, or until pasta is tender and most of the liquid is absorbed.
  6. Stir in the heavy cream and cheddar cheese until smooth and creamy. Adjust salt and pepper to taste.
  7. Serve warm, garnished with fresh parsley, if desired.
