Instructions:
Step 1: Prepare the chicken
- Pre-cook the chicken by boiling or roasting, then shred it using two forks. You can also use store-bought rotisserie chicken for added convenience.
Step 2: Cook the vegetables
- In a large skillet or pot over medium heat, melt the butter. Add the chopped onion, celery, and carrots, and sauté until softened (about 5 minutes). Stir in the green peas and cook for an additional 2 minutes.
Step 3: Make the creamy sauce
- Sprinkle the flour over the vegetables and stir well to coat. Gradually add the chicken broth while stirring to avoid lumps.
- Add the cream of chicken soup and milk, whisking until smooth. Let the mixture simmer until thickened, about 3–5 minutes.
- Stir in garlic powder, thyme (or Italian seasoning), salt, and pepper. Adjust the seasoning to taste.
