CrockPot Chicken and Dumplings

Instructions:

  1. Prepare the chicken:
    Place the chicken breasts in the bottom of your CrockPot.
  2. Add the vegetables and seasonings:
    Add the chopped onion, garlic, thyme, parsley, and black pepper. Pour in the chicken broth and the cream of chicken soup, mixing everything well to combine.
  3. Cook:
    Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
  4. Shred the chicken:
    Once the chicken is done, use two forks to shred it into bite-sized pieces directly in the CrockPot.
  5. Add the frozen peas and carrots:
    (Optional) Stir in the peas and carrots if you’d like to add some vegetables.
  6. Prepare the dumplings:
    Tear the biscuit dough into small pieces (about 1 inch) and place them on top of the chicken mixture. Make sure the dumplings are evenly spaced and don’t overcrowd the CrockPot.
  7. Cook the dumplings:
    Cover and cook on high for another 1 to 1 1/2 hours, or until the dumplings are cooked through and fluffy. Check occasionally to ensure the dumplings are not sticking together.
  8. Serve:
    Once the dumplings are ready, give everything a gentle stir and serve the Chicken and Dumplings hot.

Tips:

  • You can add other vegetables like celery or potatoes for extra heartiness.
  • For a richer flavor, you can substitute part of the chicken broth with cream or milk.
