Crockpot Ham and Potato Casserole: A Comfort Food Classic


Ingredients

For the Casserole:

  • 1 ½ pounds of potatoes (Yukon gold or red potatoes), thinly sliced
  • 2 cups cooked ham, diced
  • 1 medium onion, finely chopped
  • 2 cups shredded cheddar cheese (or your favorite cheese blend)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 3 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • Salt and pepper, to taste

Optional Add-Ins:

  • 1 cup frozen peas or green beans
  • ½ cup sour cream for extra creaminess
