For the Casserole:
- 1 ½ pounds of potatoes (Yukon gold or red potatoes), thinly sliced
- 2 cups cooked ham, diced
- 1 medium onion, finely chopped
- 2 cups shredded cheddar cheese (or your favorite cheese blend)
- 1 cup heavy cream
- 1 cup chicken broth
- 3 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- Salt and pepper, to taste
Optional Add-Ins:
- 1 cup frozen peas or green beans
- ½ cup sour cream for extra creaminess
- 1 cup shredded mozzarella or Parmesan for topping
