Fried Rice

Optional Add-ins:

  • 1/2 cup cooked shrimp, chicken, or pork, chopped
  • 1 tbsp oyster sauce or hoisin sauce (for added flavor)
  • A pinch of crushed red pepper for spice

Instructions:

  1. Prepare the Rice:
  • If using fresh rice, spread it on a baking sheet and refrigerate for at least 30 minutes to cool and dry it out a bit. Chilled rice separates easily, giving a better texture.
  1. Cook the Eggs:
  • Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Pour in the beaten eggs and scramble until just set. Remove eggs from the skillet and set aside.
  1. Sauté the Vegetables:
  • Add the remaining oil to the skillet. Sauté the onions until translucent, then add peas, carrots, and any other veggies (like bell pepper). Stir-fry for 3-4 minutes until tender.
  1. Add the Rice and Seasonings:
  • Increase the heat to high, add the rice, and stir to coat it in the oil. Pour in soy sauce and sesame oil, stirring well to distribute the flavors.
  • Add in the scrambled eggs, green onions, and any additional cooked protein. Stir everything together until warmed through.
  1. Adjust Seasoning and Serve:
  • Taste and adjust with salt, pepper, or additional soy sauce as desired. Serve hot, garnished with extra green onions or a sprinkle of sesame seeds.
