Ingredients You’ll Need

- 4 bone-in, skin-on chicken thighs (or 2 chicken breasts, cut into large chunks)
- 4 medium-sized potatoes, diced (russet, Yukon gold, or red potatoes work best)
For the Garlic Parmesan Marinade:
- 4 garlic cloves, minced
- ⅓ cup grated Parmesan cheese
- ¼ cup olive oil
- 2 tablespoons unsalted butter, melted
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- ½ teaspoon paprika (optional for added color and flavor)
- Salt and black pepper to taste

- ½ cup cherry tomatoes for a burst of freshness
