Green Chile Chicken

Instructions:

  1. Prepare the chicken:
    • Season both sides of the chicken breasts with salt, pepper, cumin, and chili powder.
    • Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5-6 minutes per side, or until browned and cooked through (internal temperature should reach 165°F/75°C). Remove the chicken from the pan and set aside.
  2. Sauté the onion and garlic:
    • In the same skillet, add a little more olive oil if necessary. Sauté the diced onion for 3-4 minutes, until softened.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
  3. Make the sauce:
    • Stir in the green chiles and chicken broth. Simmer for 5 minutes, letting the flavors combine and the sauce slightly thicken.
    • Lower the heat and whisk in the sour cream, stirring until smooth and creamy. Do not let the mixture boil. If the sauce is too thick, add a little more chicken broth.
  4. Combine chicken and sauce:
    • Return the cooked chicken breasts to the skillet, spooning the green chile sauce over the top. Sprinkle the shredded cheese over the chicken and cover with a lid. Allow the cheese to melt for about 5 minutes.
  5. Serve:
    • Once the cheese has melted and everything is heated through, garnish with fresh cilantro if desired. Serve the green chile chicken over rice, with tortillas, or alongside roasted vegetables.

Optional Tips:

  • You can also use shredded rotisserie chicken for a quicker version of this recipe. Simply mix the chicken into the sauce and top with cheese.
  • If you like a spicier dish, add chopped jalapeños or extra chili powder to the sauce.
