Step 2: Prepare the Beef Mixture
- In a large skillet, brown the ground beef over medium heat. Break it up with a spoon as it cooks.
- Add the chopped onion, bell pepper, and garlic, and cook until the onion is translucent.
- Drain any excess fat from the skillet.
Step 3: Add the Tomatoes and Seasonings
- Add the diced tomatoes (including juice), tomato sauce, Italian seasoning, salt, and pepper to the beef mixture.
- Let it simmer for about 5 minutes, allowing the flavors to blend.
Step 4: Combine and Layer
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked pasta, beef mixture, and sour cream (if using).
- Pour half of the mixture into a greased 9×13-inch baking dish.
- Sprinkle with half of the shredded cheese.
- Add the remaining pasta and beef mixture, then top with the remaining cheese.
Step 5: Bake
- Cover the casserole with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for another 10 minutes, or until the cheese is melted and bubbly.
