Hamburger Potato Casserole

Instructions:

  1. Prepare the potatoes:
  • Preheat the oven to 350°F (180°C).
  • Wash and thinly slice the potatoes (using a mandoline slicer helps for even slices).
  • Place the potato slices in a pot of water and boil for 5-7 minutes to slightly soften them. Drain and set aside.
  1. Cook the beef:
  • In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is fully browned. Season with salt, pepper, garlic, and onion powder to taste. Drain any excess grease.
  1. Make the creamy mixture:
  • In a bowl, mix together the cream of mushroom soup, milk, and sour cream (if using). Stir until smooth.
  1. Assemble the casserole:
  • In a greased baking dish, start by layering a portion of the potato slices at the bottom.
  • Spread a layer of cooked ground beef over the potatoes.
  • Pour a portion of the creamy mixture over the beef and sprinkle with shredded cheese.
  • Repeat the layers until all ingredients are used, finishing with a generous layer of shredded cheese on top.
  1. Optional crispy topping:
  • For a crispy topping, mix breadcrumbs with a bit of melted butter and sprinkle on top of the cheese before baking.
  1. Bake:
  • Cover the casserole with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  1. Serve:
  • Let the casserole sit for a few minutes before serving.
  • Garnish with chopped fresh parsley for a pop of color.
