Instructions
- Heat the olive oil in a large pot over medium heat. Add the ground beef, season with salt and pepper, and cook until browned, breaking up the meat as it cooks.
- Add the onion and garlic, and sauté until they’re soft.
- Stir in the paprika, thyme (if using), and tomato paste, and cook for about 1 minute.
- Pour in the beef broth, diced tomatoes, and pasta shells. Stir well and bring the mixture to a boil.
- Reduce the heat and let it simmer for 10-12 minutes, or until the pasta is tender and the liquid has reduced.
- Stir in the heavy cream and cheddar cheese, mixing until smooth and creamy. Adjust seasoning with salt and pepper as needed.
- Serve warm, garnished with chopped parsley, if desired.
