Instructions:
Step 1: Prepare the Pie Crust
If you’re using a pre-made pie crust, simply place it into a 9-inch pie pan and bake according to the package instructions. If you’re making your own crust, roll it out and place it in the pan. Bake it at 375°F (190°C) for about 10 minutes, or until lightly golden. Let it cool completely before filling it.
Step 2: Make the Cream Filling
- In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar over medium heat. Stir occasionally until the mixture is warm but not boiling.
- In a separate bowl, whisk the egg yolks with the cornstarch, vanilla extract, and salt until smooth.
- Gradually pour about 1/2 cup of the warm milk mixture into the egg yolks, whisking constantly to temper the eggs.
- Slowly whisk the tempered egg mixture back into the saucepan with the remaining milk mixture. Continue to cook over medium heat, stirring constantly until the mixture thickens to the consistency of pudding, about 5-7 minutes.
- Once thickened, remove the saucepan from the heat and let it cool for 5 minutes. Then, pour the cream filling into the cooled pie crust. Smooth the top with a spatula and place the pie in the refrigerator to chill for at least 2-3 hours.
Step 3: Prepare the Pecan Topping
- In a small saucepan, melt the butter over medium heat. Add the pecans, brown sugar, and heavy cream. Stir to combine.
- Cook for about 3-4 minutes, or until the mixture is slightly thickened, and the pecans are well coated. Be sure to stir frequently to prevent burning.
- Remove from heat and allow the pecan mixture to cool slightly before spooning it over the chilled cream filling.
Step 4: Assemble and Serve
Once the pecan topping has cooled slightly, spoon it evenly over the cream filling. The topping should be sticky and slightly gooey, providing a delightful contrast to the creamy filling. Refrigerate the pie for an additional hour to allow the flavors to meld together.
When ready to serve, slice the pie and enjoy the rich, creamy goodness of each bite. You can garnish with a dollop of whipped cream or a drizzle of chocolate sauce for extra indulgence.
