Instructions
Step 1: Marinate the Chicken
- In a bowl, whisk together all the marinade ingredients: olive oil, lemon juice, orange juice, garlic, honey, smoked paprika, cumin, pepper, salt, rosemary, and thyme.
- Place the chicken in a large resealable bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight. The longer the chicken marinates, the deeper the flavors will be.
Step 2: Prepare the Glaze
- In a small saucepan, combine honey (or maple syrup), soy sauce, and butter.
- Heat the mixture over low heat, stirring until the butter is melted and the ingredients are well combined. Set aside.
Step 3: Preheat the Oven
Preheat your oven to 325°F (165°C). Slow roasting at this temperature allows the chicken to cook evenly while retaining moisture.
Step 4: Roast the Chicken
- Take the chicken out of the marinade and place it on a baking sheet lined with parchment paper or in a roasting pan. Discard any remaining marinade.
- Brush a small amount of the prepared glaze over the chicken to start with, saving the rest for later.
- Place the chicken in the oven and roast for about 40-50 minutes, or until the internal temperature reaches 165°F (74°C). Baste the chicken with the glaze every 15 minutes to build up a glossy, caramelized crust.
