I found out about this at a restaurant! This is the most delicious chicken I have ever tasted.

Instructions

Step 1: Marinate the Chicken

  1. In a bowl, whisk together all the marinade ingredients: olive oil, lemon juice, orange juice, garlic, honey, smoked paprika, cumin, pepper, salt, rosemary, and thyme.
  2. Place the chicken in a large resealable bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight. The longer the chicken marinates, the deeper the flavors will be.

Step 2: Prepare the Glaze

  1. In a small saucepan, combine honey (or maple syrup), soy sauce, and butter.
  2. Heat the mixture over low heat, stirring until the butter is melted and the ingredients are well combined. Set aside.

Step 3: Preheat the Oven

Preheat your oven to 325°F (165°C). Slow roasting at this temperature allows the chicken to cook evenly while retaining moisture.

Step 4: Roast the Chicken

  1. Take the chicken out of the marinade and place it on a baking sheet lined with parchment paper or in a roasting pan. Discard any remaining marinade.
  2. Brush a small amount of the prepared glaze over the chicken to start with, saving the rest for later.
  3. Place the chicken in the oven and roast for about 40-50 minutes, or until the internal temperature reaches 165°F (74°C). Baste the chicken with the glaze every 15 minutes to build up a glossy, caramelized crust.
