Bring a large pot of salted water to a boil. Add the egg noodles or pappardelle and cook according to the package instructions until al dente.
Drain the noodles, toss them with a bit of olive oil to prevent sticking, and set aside.
Step 2: Brown the Sausage
In a large skillet or sauté pan, heat 1 tablespoon of olive oil over medium heat.
Add the Italian sausage, breaking it into small pieces with a spoon or spatula. Cook until browned and fully cooked through, about 5-7 minutes. Remove the sausage from the pan and set aside, leaving the rendered fat in the pan for extra flavor.
Step 3: Sauté the Vegetables
In the same skillet, add the onions and sauté for 2-3 minutes until softened.
Add the bell peppers and continue cooking for another 3-4 minutes until tender.
Stir in the minced garlic and cook for 30 seconds until fragrant.
