Instructions:
- Cook the Chicken:
- Season the chicken pieces with salt and pepper.
- In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-6 minutes. Remove from skillet and set aside.

- Add the Tomatoes and Olives:
- Add the cherry tomatoes, olives, oregano, and thyme to the skillet. Stir well and cook until the tomatoes start to soften, about 2 minutes.
- Combine and Finish:
- Return the cooked chicken to the skillet, and stir everything together. Sprinkle with crumbled feta cheese and cook for another 2 minutes, just until the cheese starts to warm.
- Add a squeeze of lemon juice if desired and garnish with fresh parsley.
