How to Make Mexican Casserole
1. Prepare the Filling:
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook ground beef or turkey over medium heat until browned. Drain any excess grease.
- Stir in taco seasoning, beans, corn, and diced tomatoes. Let it simmer for 5 minutes to meld the flavors.
2. Layer the Casserole:
- Grease a 9×13-inch casserole dish.
- Spread a thin layer of the meat mixture on the bottom.
- Layer tortilla strips over the meat.
- Sprinkle a layer of cheese on top.
- Repeat layers until all ingredients are used, finishing with a generous cheese layer on top.
3. Bake to Perfection:
- Cover with foil and bake for 20 minutes.
- Remove the foil and bake for another 10 minutes, until the cheese is bubbly and golden.
4. Serve and Garnish:
- Let the casserole cool for 5–10 minutes before serving.
- Top with your favorite garnishes, such as sour cream, guacamole, or fresh cilantro.
