Mexican Casserole: A Flavorful, One-Dish Wonder

How to Make Mexican Casserole

1. Prepare the Filling:

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook ground beef or turkey over medium heat until browned. Drain any excess grease.
  • Stir in taco seasoning, beans, corn, and diced tomatoes. Let it simmer for 5 minutes to meld the flavors.

2. Layer the Casserole:

  • Grease a 9×13-inch casserole dish.
  • Spread a thin layer of the meat mixture on the bottom.
  • Layer tortilla strips over the meat.
  • Sprinkle a layer of cheese on top.
  • Repeat layers until all ingredients are used, finishing with a generous cheese layer on top.

3. Bake to Perfection:

  • Cover with foil and bake for 20 minutes.
  • Remove the foil and bake for another 10 minutes, until the cheese is bubbly and golden.

4. Serve and Garnish:

  • Let the casserole cool for 5–10 minutes before serving.
  • Top with your favorite garnishes, such as sour cream, guacamole, or fresh cilantro.
