Instructions:

Step 1: Preheat Oven

  • Preheat your oven to 375°F (190°C).

Step 2: Cook the Beef Mixture

  1. Heat a large skillet over medium heat. Add ground beef and cook until browned, breaking it up with a wooden spoon as it cooks.
  2. Add diced onion and garlic, cooking for 2-3 minutes until softened.
  3. Stir in taco seasoning, diced tomatoes with chilies, black beans, corn, and salsa. Let the mixture simmer for 5 minutes, stirring occasionally. Remove from heat.

Step 3: Assemble the Casserole

  4. Spread sour cream or Greek yogurt over the final cheese layer for extra creaminess (optional).

Step 4: Bake

  • Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
  • Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.

Step 5: Garnish and Serve

  • Let the casserole rest for 5 minutes before serving.
  • Add your favorite toppings, such as cilantro, avocado, jalapeños, or green onions.
