MEXICAN CASSEROLE

Instructions:

  1. Preheat the Oven:
  • Preheat your oven to 350°F (175°C).
  1. Cook the Meat:
  • In a large skillet over medium heat, add the ground beef and cook until browned. Drain excess fat.
  • Add chopped onion and minced garlic to the skillet and sauté until the onion is translucent.
  1. Add Seasoning and Ingredients:
  • Stir in the taco seasoning and cook for 1-2 minutes.
  • Add the black beans, corn, diced tomatoes, cooked rice, and diced green chilies (if using). Mix well and season with salt and pepper to taste.
  1. Layer the Casserole:
  • In a greased 9×13-inch baking dish, spread half of the meat mixture evenly.
  • Sprinkle half of the shredded cheese over the meat mixture.
  • Add the remaining meat mixture on top and finish with the rest of the cheese.
  1. Bake:
  • Cover the casserole with aluminum foil and bake for 25-30 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  1. Serve:
  • Remove from the oven and let it cool for a few minutes.
  • Serve with sour cream, chopped cilantro, green onions, jalapeños, and diced avocado as toppings.
