Milk Brioche Rolls

Instructions:

  1. Prepare the yeast mixture:
  • In a small bowl, mix the warm milk, yeast, and a teaspoon of sugar. Let it sit for 10 minutes until it becomes foamy.
  1. Mix the dough:
  • In a large mixing bowl, combine the flour, sugar, and salt. Make a well in the center and add the eggs, softened butter, and yeast mixture.
  • Mix everything together until a soft dough forms.
  1. Knead the dough:
  • Transfer the dough to a floured surface and knead for about 10 minutes until it’s smooth and elastic.
  1. First rise:
  • Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-1.5 hours or until it has doubled in size.
  1. Shape the rolls:
  • Once risen, punch down the dough and divide it into equal portions (around 12-15 pieces depending on size).
  • Shape each portion into a round ball and place them on a baking tray lined with parchment paper, spaced slightly apart.
  1. Second rise:
  • Cover the rolls with a cloth and let them rise again for about 30-40 minutes.
  1. Prepare the egg wash:
  • Preheat the oven to 180°C (350°F). Beat the egg yolk with milk and brush it over the top of the rolls for a shiny, golden crust.
  1. Bake:
  • Bake the rolls in the preheated oven for 20-25 minutes, or until they are golden brown on top.
  1. Cool and serve:
  • Let the rolls cool slightly before serving. Enjoy them warm with butter or jam, or simply on their own!

Tips:

  • For extra softness, you can add 1 tablespoon of milk powder to the dough.
  • You can also add chocolate chips or a jam filling for a sweet variation!
