Instructions:
- Prepare the yeast mixture:

- Mix the dough:
- In a large mixing bowl, combine the flour, sugar, and salt. Make a well in the center and add the eggs, softened butter, and yeast mixture.

- Knead the dough:
- Transfer the dough to a floured surface and knead for about 10 minutes until it’s smooth and elastic.
- First rise:
- Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-1.5 hours or until it has doubled in size.
- Shape the rolls:
- Once risen, punch down the dough and divide it into equal portions (around 12-15 pieces depending on size).
- Shape each portion into a round ball and place them on a baking tray lined with parchment paper, spaced slightly apart.
- Second rise:
- Cover the rolls with a cloth and let them rise again for about 30-40 minutes.
- Prepare the egg wash:
- Preheat the oven to 180°C (350°F). Beat the egg yolk with milk and brush it over the top of the rolls for a shiny, golden crust.
- Bake:
- Bake the rolls in the preheated oven for 20-25 minutes, or until they are golden brown on top.
