Mississippi Mud Potatoes

Instructions:

  1. Preheat the oven:
  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  1. Prepare the potatoes:
  • Bring a large pot of salted water to a boil. Add the diced potatoes and cook for 8-10 minutes, until just tender but not fully cooked (they’ll finish in the oven). Drain and set aside.
  1. Make the cheesy mixture:
  • In a large mixing bowl, combine the shredded cheddar cheese, sour cream, mayonnaise, melted butter, garlic powder, onion powder, salt, and pepper. Mix well until smooth and creamy.
  1. Assemble the casserole:
  • Fold the cooked potatoes into the cheesy mixture, ensuring all the potato pieces are coated evenly.
  • Transfer the potato mixture into the prepared baking dish, spreading it out evenly.
  1. Add bacon and extra cheese:
  • Sprinkle the crumbled bacon over the top of the casserole.
  • If you like extra gooeyness, sprinkle shredded mozzarella cheese on top of the bacon.
  1. Bake:
  • Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted, bubbling, and golden on top.
  1. Garnish and serve:
  • Remove from the oven and let it cool slightly. Garnish with chopped green onions if desired.
  1. Serve:
  • Serve this casserole alongside your favorite mains like fried chicken, barbecue, or roasted meats.

Tips:

  • For a twist, add diced jalapeños for a spicy kick or swap cheddar for pepper jack cheese.
  • You can make this dish ahead of time and reheat before serving.

Mississippi Mud Potatoes are the perfect side dish for any gathering or family meal, thanks to their rich, creamy, and cheesy goodness with a crispy bacon topping!
