Peach Cobbler

Instructions:

  1. Preheat the oven: to 350°F (175°C).
  2. Prepare the peaches:
  • If using fresh peaches, peel and slice them. If using canned peaches, drain them well.
  • In a medium bowl, toss the peaches with 1 cup of granulated sugar (and brown sugar if using), cinnamon, nutmeg, vanilla extract, and lemon juice. Set aside.
  1. Make the batter:
  • In a large mixing bowl, whisk together the flour, 1 cup granulated sugar, baking powder, and a pinch of salt.
  • Add the milk to the dry ingredients and stir until smooth.
  1. Assemble the cobbler:
  • Pour the melted butter into the bottom of a 9×13-inch baking dish.
  • Pour the batter over the butter without stirring.
  • Spoon the peach mixture evenly over the batter. The batter will rise around the peaches as it bakes.
  1. Bake the cobbler:
  • Place the dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.
  1. Serve: Let the cobbler cool slightly before serving. It’s delicious on its own, but even better with a scoop of vanilla ice cream or whipped cream!
