In a large soup pot or Dutch oven, cook the chopped bacon over medium heat until crispy.
Remove the bacon pieces with a slotted spoon and set them aside on a paper towel to drain. Leave about 2-3 tablespoons of the bacon grease in the pot for flavor.
2. Sauté the Vegetables
Add the chopped onion to the pot with the bacon grease and sauté until translucent, about 3-4 minutes.
Stir in the minced garlic and cook for an additional minute, until fragrant.
