Potato Bread

Instructions:

  1. Prepare the Mashed Potatoes:
  • Peel and chop the potatoes into chunks, then boil them in salted water until tender (about 15-20 minutes).
  • Drain and mash the potatoes until smooth. Let them cool to room temperature.
  1. Combine Wet Ingredients:
  • In a large mixing bowl, combine the warm milk, sugar, melted butter, and mashed potatoes. Mix until well combined.
  1. Add Yeast:
  • Sprinkle the instant yeast over the mixture and let it sit for about 5 minutes until it becomes foamy.
  1. Mix in Dry Ingredients:
  • Add the salt and gradually mix in the flour, one cup at a time, until a dough forms. The dough will be soft and slightly sticky.
  1. Knead the Dough:
  • Turn the dough out onto a floured surface and knead for about 8-10 minutes, adding more flour as needed, until the dough is smooth and elastic.
  1. First Rise:
  • Place the dough in a greased bowl, cover it with a kitchen towel or plastic wrap, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
  1. Shape the Bread:
  • Punch down the risen dough and turn it out onto a floured surface. Shape it into a loaf or divide it into rolls.
  1. Second Rise:
  • Place the shaped dough into a greased loaf pan or on a baking sheet for rolls. Cover again and let it rise for another 30-45 minutes, or until puffy.
  1. Preheat Oven:
  • Preheat your oven to 350°F (175°C).
  1. Bake:
    • If desired, brush the top with a beaten egg for a shiny finish. Bake for 30-35 minutes (for a loaf) or 15-20 minutes (for rolls) until golden brown and sounds hollow when tapped.
  2. Cool:
    • Remove from the oven and let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
