Potatoes and Ham in a Slow Cooker Scalloped Dish, Eight Servings

Instructions:

  1. Prepare the slow cooker: Grease the inside of your slow cooker with butter or non-stick spray.
  2. Layer the ingredients: Layer half of the sliced potatoes at the bottom of the slow cooker. Top with half of the diced ham, half of the sliced onion, and half of the shredded cheeses. Season lightly with salt, pepper, and thyme.
  3. Repeat the layers: Repeat with the remaining potatoes, ham, onions, and cheese.
  4. Mix the sauce: In a bowl, whisk together the cream of mushroom soup, milk, minced garlic, and a little more salt and pepper. Pour this mixture evenly over the layers in the slow cooker.
  5. Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender and the cheese is melted and bubbly.
  6. Serve: Once cooked, garnish with freshly chopped parsley if desired, and serve warm.
