Step 1: Prepare the Potatoes and Oven

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish with butter or nonstick spray.

Step 2: Make the Cream Sauce

  1. In a medium saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
  2. Sprinkle in the flour, whisking continuously, and cook for 1-2 minutes to make a roux.
  3. Gradually whisk in the milk and cream (if using), continuing to stir until the mixture is smooth and thickens, about 5-7 minutes.
  4. Add 1 cup of shredded cheese, whisking until melted and creamy. Season with salt, pepper, and paprika (if using).

Step 3: Layer the Potatoes

  1. Arrange half of the sliced potatoes in an even layer in the baking dish.
  2. Pour half of the cheese sauce over the potatoes, spreading it to cover them evenly.
  3. Add the remaining potato slices on top, then pour the rest of the cheese sauce over them.

Step 4: Bake

  1. Cover the baking dish with aluminum foil and bake for 45 minutes.
  2. Remove the foil and sprinkle the remaining ½ cup of shredded cheese on top. Continue baking, uncovered, for an additional 20-25 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.

Step 5: Garnish and Serve

Remove the dish from the oven and let it cool for a few minutes. Garnish with fresh thyme or chopped parsley, and enjoy!
