Slow-Cooked Italian Pot Roast

Instructions:

  1. Sear the Meat:
  • Season the chuck roast generously with salt and pepper.
  • In a large skillet over medium-high heat, heat the olive oil. Sear the roast on all sides until browned, about 3-4 minutes per side. Transfer to a slow cooker.
  1. Prepare the Sauce:
  • In the same skillet, add the onion and garlic, sautéing until softened, about 3 minutes. Pour in the crushed tomatoes, beef broth, red wine (if using), tomato paste, Italian seasoning, and crushed red pepper flakes. Stir and bring to a gentle simmer.
  1. Combine in Slow Cooker:
  • Pour the tomato mixture over the roast in the slow cooker. Add mushrooms if using.
  • Cover and cook on low for 8-9 hours or on high for 4-5 hours, until the roast is tender and falls apart easily.
  1. Serve:
  • Once the roast is cooked, shred it into large pieces or slice it. Serve with the sauce and garnish with fresh parsley.
