Swedish Apple Cake

Step 3: Make the Batter

  1. In a large bowl, cream the butter and sugar together until light and fluffy. This can be done with a hand mixer or stand mixer on medium speed.
  2. Add the eggs one at a time, beating well after each addition. Make sure each egg is fully incorporated before adding the next.
  3. In a separate bowl, sift together the flour, baking powder, salt, cinnamon, and cardamom.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined, and then stir in the vanilla extract.

Step 4: Assemble the Cake

  1. Pour the batter into your prepared cake pan, spreading it evenly.
  2. Arrange the apple slices on top in a circular pattern, slightly overlapping each slice for a decorative effect.
  3. Sprinkle a light dusting of sugar and cinnamon on top of the apples for a caramelized, spiced topping as the cake bakes.

Step 5: Bake the Cake

Bake the cake for 40-50 minutes or until a toothpick inserted into the center comes out clean. The apples should be tender, and the top should be golden brown.

Step 6: Cool and Serve

Allow the cake to cool for about 10-15 minutes in the pan, then carefully remove it and transfer it to a serving plate. Dust with powdered sugar if desired. Serve warm or at room temperature with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgent touch.
