Tater Tot Breakfast Casserole

Instructions:

  1. Preheat oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook the sausage: In a skillet, cook the breakfast sausage over medium heat until browned. If using bacon, cook until crispy. Drain any excess grease. Remove from the skillet and set aside.
  3. Sauté veggies: In the same skillet, sauté the diced onions and bell peppers until softened, about 3-4 minutes. Set aside.
  4. Whisk eggs: In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.
  5. Assemble the casserole: In the greased baking dish, layer the cooked sausage (or bacon), sautéed veggies, and shredded cheese evenly. Pour the egg mixture over the top.
  6. Add tater tots: Arrange the frozen tater tots on top of the casserole in an even layer.
  7. Bake: Place the dish in the preheated oven and bake for 40-45 minutes, or until the eggs are set and the tater tots are golden and crispy.
  8. Garnish and serve: Let the casserole cool for a few minutes before serving. Garnish with green onions or parsley if desired.
