Tater Tot Breakfast Casserole

Instructions:

  1. Preheat Oven:
  • Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  1. Cook the Sausage:
  • In a skillet over medium heat, cook the breakfast sausage until browned and cooked through. If using onion and bell pepper, add them to the skillet and cook until softened. Drain off any excess grease and set the mixture aside to cool slightly.
  1. Prepare the Egg Mixture:
  • In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, smoked paprika, salt, and pepper.
  1. Assemble the Casserole:
  • In the greased baking dish, spread the cooked sausage mixture evenly across the bottom. Sprinkle 1 ½ cups of shredded cheese over the sausage. Pour the egg mixture over the top, making sure it’s evenly distributed.
  1. Add Tater Tots:
  • Arrange the frozen tater tots in a single layer on top of the casserole.
  1. Bake:
  • Bake the casserole in the preheated oven for 35-40 minutes, or until the eggs are set and the tater tots are crispy and golden brown. In the last 5 minutes of baking, sprinkle the remaining ½ cup of cheese on top and let it melt.
