Ingredients:
For the Beef:
- 2 lbs (900g) beef chuck or stew meat, cut into 1.5-inch cubes
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
For the Stew:
- 1 large onion, chopped
- 2 carrots, sliced into thick rounds
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 2 tablespoons tomato paste
- 4 cups beef broth (or stock)
- 1 cup red wine (optional, for depth of flavor)
- 2 large potatoes, peeled and cubed
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- Salt and pepper, to taste
Optional Additions:
- 1 cup peas or green beans (added at the end for freshness)
- 1 teaspoon smoked paprika for a subtle smoky flavor
