Twice-Baked Potatoes with Meat and Cheese Filling

Instructions:

  1. Prepare the potatoes:
  • Preheat your oven to 400°F (200°C).
  • Scrub the potatoes clean and poke holes in them with a fork.
  • Place them directly on the oven rack and bake for about 50-60 minutes, or until they are tender when pierced with a fork.
  • Let them cool slightly.
  1. Prepare the filling:
  • While the potatoes bake, heat a large skillet over medium heat and cook the ground beef until browned, breaking it into small crumbles. Drain excess fat if necessary.
  • Add the chopped onion and garlic to the skillet, cooking until softened (about 5 minutes).
  • Stir in Worcestershire sauce, salt, pepper, and paprika (if using). Set the beef mixture aside.
  1. Scoop and mix the potato filling:
  • Once the potatoes are cool enough to handle, slice them in half lengthwise and carefully scoop out the flesh, leaving about 1/4 inch of potato around the skin.
  • In a large bowl, mash the scooped-out potato with butter, sour cream, and milk until smooth and creamy. Season with salt and pepper to taste.
  • Stir in half of the shredded cheese and the beef mixture.
  1. Stuff and bake the potatoes again:
  • Preheat the oven to 375°F (190°C).
  • Spoon the beef and potato mixture back into the potato skins, mounding them slightly.
  • Top each potato with the remaining cheese.
  • Place the stuffed potatoes on a baking sheet and bake for 15-20 minutes, or until the cheese is melted and the tops are golden.
  1. Garnish and serve:
  • Remove from the oven and let cool for a few minutes. Garnish with chopped green onions if desired.
