1. Preheat and Prepare the Pan
- Preheat your oven to 375°F (190°C).
- Use a 10–12 inch oven-safe skillet (like cast iron) and heat olive oil or butter over medium heat.
2. Sauté the Vegetables
- Add diced onions and bell peppers to the skillet. Sauté for 3–4 minutes until softened.
- Stir in zucchini slices and cook for another 2–3 minutes.
- Add spinach and cherry tomatoes, cooking until the spinach wilts slightly.
- Season with salt and pepper to taste.
3. Prepare the Egg Mixture
- In a large bowl, whisk together the eggs, milk, shredded cheese, salt, and black pepper.
